As to the Voss cake, we call it that because the doctor from Voss invited us to his house and had us for dinner and the wife made the cake for us for desert.
The recipe she gave me is as follows:
2eggs beaten separately
2 cups almond (ground finely) =can be blanched or not, I like the fiber.
1 cup sugar
Grind the almonds with the sugar to mix, add the yolk and the fold in the well beaten egg whites.Pour into a 8 or 9 inch cake pan lined with a piece of wax paper.
Bake at 325 for 40- 45 mins.
Invert on to a plate .
Whip out some whipped cream and frost it. i like to drain a can of apricots and decorate the top with it.
